Most of the time Surimi as it is known is usually fish meat and some TVP or similar. Dehydrated wise it is alot easier to dehydrate then other fishes such as Tuna or anchovy or dried smoked fish, it is alot less stinky and easeir to cut as they come in sticks or the snow crab legs look a like chunks after they are made to look like. Some contain gliuten some dont depends on where in the world art thou.

FYI – imitation crab meat is NOT gluten free. It’s full of gluten!

It depends on the brand. Aldi has immitation crabmeat that is without gluten. I suppose you could try to find real dehydrated crab meat, but $$$$.

Trans-Ocean Products are free from gluten too: http://trans-ocean.com
