you'll need:

4 tablespoons Ova Easy whole crystal egg
4 tablespoons freeze dried pork sausage crumbs
6 sun-dried tomatoes
1 tablespoon tomato sauce powder
1/2 teaspoon dried oregano
1 tablespoon ghee
2 tablespoons freeze-dried grated Parmesan cheese

at home:

Mix powdered eggs, pork sausage crumbs, sun-dried tomatoes, oregano and tomato sauce powder in a medium-sized zip-lock bag.
Pack the remaining ingredients separately.

on the trail:

Add 1/2 cup water to the bag with the Spicy Sausage Scramble mixture.
Season to taste and mix  well.
Close the bag and set aside.
Melt the ghee in a frying pan over medium-low heat.
Pour in the egg mixture and let sit, without stirring for 20 seconds.
Gently scramble until the eggs are softly set.
Remove from the heat and sprinkle with Parmesan.

Notes: for Paleo and dairy-free version, omit Parmesan cheese and replace ghee with olive oil.
