Pumpkin Pie Muffins

Halloween is coming! Treat yourself to spooky campfire stories and pumpkin pie muffins!

you'll need:

1 cup dry muffin mix
2 tablespoons pumpkin powder (or 1/4 cup canned pumpkin)
1 tablespoon sugar
1/2 teaspoon ground cinnamon
1/8 tablespoon ground ginger
1/8 tablespoon ground cardamom
1/8 tablespoon ground nutmeg
2 tablespoons olive oil
6 silicone or paper muffin cups

at home:

Mix dry muffin mix, pumpkin powder, sugar and spices in a medium-sized zip-lock freezer bag.
Pack remaining ingredients separately.

on the trail:

Pour olive oil and 1/4 cup water into the bag with dry baking mixture.
Close the bag and knead until smooth.
Cut off a corner of the bag and squeeze batter into the muffin cups.
Bake in the Outback Oven for 12 minutes.

    В какой такой духовке в походе?

      Есть такие. У меня Outback Oven от Backpackers pantry. К сожалению, они ее больше не производят. Но походную печку можно легко сделать самостоятельно из 2-х котелков или котелка и простой металлической кружки.
