Lohikeitto – Finnish Fish Soup

In Finnish, “lohi” means salmon and “keitto” means soup. This creamy fish chowder is a common dish in all Scandinavian countries. It’s one of those delicious soups that’s extremely easy to make and very hard to forget.

you'll need:

2 tablespoons instant mashed potatoes iHerb
2 tablespoons heavy cream powder
1/4 teaspoon all-purpose seasoning
1/2 vegetable bouillon cube iHerb
1 teaspoon onion powder iHerb
1 bay leaf
1 pouch boneless pink salmon (about 70g/ 2.5oz) iHerb

at home:

Mix all dry ingredients in a medium-sized zip-lock bag.
Pack the remaining ingredients separately.

on the trail:

Pour  Lohikeitto soup mixture into the pot and add 1 cup water.
Bring to a boil, stirring occasionally.
Add drained salmon.
Simmer for 5 minutes; remove from the heat and discard bay leaf.
