Lohikeitto – Finnish Fish Soup
In Finnish, “lohi” means salmon and “keitto” means soup. This creamy fish chowder is a common dish in all Scandinavian countries. It’s one of those delicious soups that’s extremely easy to make and very hard to forget.

you'll need:
2 tablespoons full cream milk powder (Nestle Nido)
1/4 teaspoon fish seasoning
1 teaspoon vegetable bouillon powder
1 tablespoon ghee
1 small shallot
Salt
Pepper
1 bay leaf
1 pouch boneless pink salmon (about 70g/ 2.5oz)
at home:
Mix mashed potatoes, milk powder, fish seasoning and bouillon powder in a zip-lock bag.
Pack remaining ingredients separately.
on the trail:
Melt ghee in a pot, add chopped onions and cook until soft and translucent.
Pour in potato-milk mixture and 1 cup water.
Bring to a boil, stirring occasionally.
Season to taste with salt and pepper; then add bay leaf and drained salmon.
Simmer for 5 minutes; remove from the heat and discard bay leaf.
