you'll need:

3 tablespoons instant mashed potatoes
1 tablespoon full cream milk powder (Nestle Nido)
1 tablespoon spinach powder (preferably organic)
1 teaspoon onion powder
1/2 teaspoon vegetable bouillon powder

at home:

Mix all the ingredients in a small zip lock bag.

on the trail:

Pour creamy spinach soup mixture into a mug.
Add 1 cup boiling water.
Stir, cover and let soak for 5 minutes.

    Does it really need the powdered milk? Is it for taste or consistency or nutrition?
    Thinking of making a small jar of a spinach soup mix then can just use a few spoonfuls vs. having to combine on the trail (or in my case the classroom next year).

      It’s for both – taste and nutrition. You can avoid it if you are lactose intolerant or replace with coconut milk powder.

    Quite tasty. I followed the recipe as written. I think I’ll add a tablespoon or more of Parmesan cheese, maybe a teaspoon of garlic powder and some white or black pepper next time.

    Can the full cream milk powder be replaced by skim milk powder? I was thinking of using walmart True Value brand.

      Hi Steven! Sure, you can replace whole milk powder with skimmed version.
