Line a 25 x 20 cm (8 x 10 inch) baking dish with parchment paper.
Pulse dates in a food processor until you get a sticky paste.
Transfer date paste to a large bowl.
Add corn flakes, sunflower seeds, and canola oil; stir until well combined.
Press corn flake mixture into prepared baking dish.
Melt chocolate and pour over, spreading evenly.
Cool to room temperature; then refrigerate about 2 hours, or until firm.
Remove slab from baking dish, cut into 12 bars.
Wrap each bar in waxed paper or aluminum foil.
Store bars in an airtight container in the fridge for up to one month, until you are ready to put them in a your backpack.

When I made mine, much like most things I make with dates, they do not hold together very well. The chocolate on top seems to be the only thing holding it together.
Try to take big Medjoldates. They are jucier and help to hold all ingredients together
Lovely recipe! I was wondering one thing. How long can you keep this fresh out of the fridge? I’ll go canoeing for one week and was wondering if this, or one of the other bars on this site, will be a proper snack to take along.
