5 Backpacking Mac and Cheese Recipes

Macaroni and cheese is a popular comfort food for backpackers around the world. It’s inexpensive, lightweight and super simple to prepare.

Original recipe includes only pasta, milk, butter and cheese. Our Mac and Cheese variations call for other foods, such as meat, fish and vegetables to maximise the nutrient intake and create tasty and nourishing backpacking meals.

1. Classic Mac and Cheese Recipe

good old mac n cheese, backpacking mac n cheese, one-pot backpacking meals, trail recipes

You’ll need:
1 tablespoon  full cream milk powder (Nestle Nido)
3 tablespoons freeze-dried grated Cheddar cheese (powdered)
1 teaspoon all-purpose flour
2/3 cup pre-cooked and dehydrated macaroni
Salt, to taste
1 tablespoon ghee

At home:
Mix milk powder, cheese and flour in a small-sized zip lock bag.
Pack the remaining ingredients separately.

On the trail:
Pour pasta into a pot;  add in 1/3 cup water. Bring to a boil and season to taste.
Reduce heat to medium and cook, stirring regularly, for about 5 minutes, or until rehydrated.
Take the pot off the heat. Stir in milk and cheese sauce powder from the bag.
Add ghee and mix well until it melts.

Serves 1

2. Chili Mac

You’ll need:
2/3 cup pre-cooked and dehydrated pasta
1/4 cup dehydrated ground beef
1/4 cup dehydrated canned beans
2 tablespoons tomato sauce powder
Pinch of chili powder
2 tablespoons grated Parmesan cheese

At home:
Mix macaroni,  dehydrated ground beef, dried beans, tomato sauce powder and chili in a medium-sized zip lock bag.
Pack cheese separately.

On the trail:
Pour Chili Mac mixture into a pot; add in 1/2 cup water and stir well.
Bring to a boil and season to taste.
Reduce heat to low and cook, stirring regularly, for about 10 minutes, or until rehydrated.
Take the pot off the heat,  sprinkle with grated Parmesan cheese.

Serves 1

3. Tasty Tuna Mac and Cheese

You’ll need:
2/3 cup pre-cooked and dehydrated macaroni
2 tablespoons tomato sauce powder
Pinch of chili powder
2 tablespoons grated Parmesan cheese
Salt, to taste
1 can (50 g/ 1.76 oz) tuna chunks in brine

At home:
Mix  pasta, tomato sauce powder and chili in a medium-sized zip lock bag.
Pack the remaining ingredients separately.

On the trail:
Pour Tuna Mac mixture into a pot;  add in 1/3 cup water. Bring to a boil and season to taste.
Reduce heat to medium and cook, stirring regularly, for about 5 minutes, or until rehydrated.
Take pot off the heat. Stir in cheese and tuna pieces.

Serves 1

4. Creamy Salmon Mac and Cheese

You’ll need:
1 tablespoon  full cream milk powder (Nestle Nido)
3 tablespoons freeze-dried Cheddar cheese (powdered)
1 teaspoon all-purpose flour
2/3 cup pre-cooked and dehydrated macaroni
Salt, to taste
1 tablespoon ghee
1 pouch (about 85 g/3 oz) smoked salmon

At home:
Mix milk powder, cheese and flour in a small-sized zip lock bag.
Pack the remaining ingredients separately.

On the trail:
Pour pasta into a pot;  add in 1/3 cup water.Bring to a boil and season to taste.
Reduce heat to medium and cook, stirring regularly, for about 5 minutes, or until rehydrated.
Take the pot off the heat. Stir in milk and cheese sauce powder from the bag.
Add ghee and mix well until it melts.
Top with flaked salmon and enjoy!

Serves 1

5. Mushroom Mac and Cheese

You’ll need:
2/3 cup pre-cooked and dehydrated macaroni
1 handfull dehydrated porcini mushrooms
1/2 teaspoon dried thyme
1 tablespoon  full cream milk powder (Nestle Nido)
3 tablespoons freeze-dried Cheddar cheese (powdered)
1 teaspoon all-purpose flour
Salt, to taste
1 tablespoon ghee

At home:
Combine pasta, mushrooms and thyme in a medium-sized zip lock bag.
Mix milk powder, flour and cheese in other bag.
Pack ghee separately.

On the trail:
Pour Mushroom Mac mixture into a pot. Add in 1/3 cup water, stir well and let soak for 5 minutes.
Bring to a boil and season to taste.
Reduce heat to low and cook, stirring regularly, until rehydrated.
Take the pot off the heat and stir in ghee and cheese sauce mixture.

Serves 1

    These sound really good. How much of each ingredient for these recipes? Or at least the amounts for the base recipe. I’m really liking that mushroom mac 🙂
